This recipe came from Veganomicon. I have always been a little skeptical with meat substitutes found in grocery stores, since many are kinda blah and full of ingredients you can hardly pronounce. Maybe it was my mother nagging me about protein, but I decided to give these meat substitutes a try...homemade of course. I love chickpeas so I figured this recipe would be awesome...and it was. Although I had to go up to whole foods for a certain ingredient, and get soaking wet in a thunderstorm, it was totally worth it. Now this recipe is vegan only as it uses vital wheat gluten to hold the patties together.
The patties can either be baked or pan fried, like I did, for a crispy exterior. After I took one bite it popped in my head, "This would be great for a chicken parmesan makeover." So that's what I did. I fried up the cutlets, spread on some tomato sauce, and sprinkled the top with Dayia cheddar cheese. This is by far the best non dairy cheese I have every had. Seriously, it tastes like real cheese. Good dairy free cheese is very hard to find. Most taste like rubber and never melt. I also bought Follow Your Heart vegan monterey jack cheese, which I have heard is another good brand. Both cheeses are also gluten free.
As I type this I am making Italian Rice and Beans (from Vegan Yum Yum). Post Recipe and Pics tomorrow and well as 2 sewing projects I've been working on! - kab
