Corn Fritters


On my drive home from work there is a farm stand that sells 12 ears of corn for $4. AND according to my fellow coworkers, the guy always throws in 2 extra ears of corn. What a bargain!

Now… I love corn, but I absolutely HATE eating it off of the ear. It’s messy and I’m not trying to spend 25 minutes afterward picking corn out of my teeth. Just saying. So I cut it off.

This recipe came from Vegan Yum Yum like some previous posts. The original recipe used a mixture of all purpose flour and corn flour but I decided to try and make it gluten free by substituting the all purpose flour with some brown rice. And…..it worked! It’s not often that you can just substitute wheat flour with brown rice and call it a day. Now Vegan Yum Yum has the fritters served with a vegan sour cream but I had none. Don’t judge but ketchup was calling my name and they tasted good together. I’m kind of a ketchup person : )

Anyway… here is the recipe!

Corn Fritters

½ cup corn meal
½ cup brown rice flour
¼ tsp xanthan gum
¾ tsp kosher salt
½ tsp baking powder
½ tsp Old Bay seasoning (Cajun seasoning would work too!)
¼ tsp cumin
¼ tsp paprika
½ cup rice milk (Don’t worry if you only have vanilla flavored rice milk, it worked fine for me.)
¼ cup water
2 cups corn
Canola Oil, for pan frying.

Step One: In a bowl whisk together all of the dry ingredients.
Step Two: Add in the rice milk and water. Whisk until smooth.
Step Three: Mix in the corn. Use a spoon or spatula for this step.
Step Four: Add about 3-4 tablespoons of canola oil into a large pan over medium heat.
Step Five: Once the oil is heated, scoop batter into pan (tablespoon size) and flatten slightly with the back of a spoon. Cook about 3-4 minutes on each side or until golden. Place on a paper towel to drain excess oil.


Okay, I love my new phone but jeez some of these pictures are kinda crappy. I kept them small so they aren't all fuzzy. But you get the picture. Note to self: Must. Use. Real. Camera!
