Sunday Salad

Today it was super hot at the farmer's market and way to crowded. I slept in, well till 7am, and didn't get up there till about 8:30. Everyone was there, literally. But, the trip was a success. Let's see... I got peaches, blackberries, raspberries, purple fingerling potatoes (so pretty!), tomatillos, arugula and a salad mix, broccoli, poblano peppers, green bell peppers, and flowers. It's really hard to pass up two huge bouquets of flowers when they are only 6 dollars for both. Plus they look pretty on the table : ).

So for dinner I made roasted fingerling potatoes and a salad. For the potatoes I roasted them at 400 degrees until they were crispy, about 15-20 minutes. Just a little olive oil and salt and pepper.

For the salad I caramelized some red onion, and cooked a poblano pepper and zucchini. I put that on top of my arugula and salad mix and topped it with a homemade russian type dressing (totally vegan) and cherry tomatoes from my garden. For the dressing I used a vegan mayonnaise (I like vegenaise), chili sauce, lemon juice, and salt and pepper. It's really good.
