I'm constantly making granola bars. I love them. Most of the ones I make are full of nuts and dried fruit. These ones are a little different. My inspiration was those Quaker granola bars. You know the box that comes with the smores, chocolate chip, and peanut butter flavors. They taste very similar but less stale and processed. Here's how I made them!!
Granola Bars
1 3/4 cup gf oats
1 3/4 cup gf rice cereal
1/3 cup brown sugar
1/3 cup agave nectar
1/3 cup coconut oil (melted)
1/2 chocolate chips
- In a large bowl mix the oats and rice cereal.
- In a sauce pan combine the brown sugar, agave, and coconut oil. Bring to a boil and carefully pour over the oat and cereal mix. Toss to combine and press into a parchment lined 8 x 8 inch pan.
- Sprinkle the chocolate chips on top. Allow to cool completely and cut into bars.
Enjoy!
