Salad Dressing

Recently I've started eating more salads. Maybe because it's a nice light meal, or maybe because I have to wear a bikini soon. Who knows!


Salads can be down right boring and therefore I have a tendency to cover it in ranch. (Not Helping!!). I also think iceberg lettuce is gross. How people eat an entire wedge of it, covered in blue cheese (yuck!), is beyond my comprehension. But I digress.


Here are three awesome salad dressings that will make your salads anything but boring! From the left: Vegan Caesar, Chive Vinaigrette, and Mustard Vinaigrette.


Vegan Casear Dressing

1 cup vegenaise
2 tsp dijon mustard
2 garlic cloves, minced
1 tbsp water
1 tbsp olive oil
1 1/2 tsp nutritional yeast
salt and pepper (a good pinch of each)
1 tbsp lemon juice

- Whisk all ingredients together. 

Chive Vinaigrette

1 tsp dijon mustard
1 tsp agave nectar
2 tbsp white wine vinegar
salt and pepper
6 tbsp olive oil
2 tbsp chopped chives

- In a small bowl whisk together the dijon, agave, white wine vinegar, and salt and pepper. Slowly whisk in the olive oil. Stir in the chives.

Mustard Vinaigrette

3 tbsp coarse mustard
1 1/2 tbsp white wine vinegar
salt and pepper
5 tbsp olive oil
- In a small bowl whisk together the mustard, white wine vinegar, and salt and pepper. Slowly whisk in the olive oil.



*Remember, it's okay to be generous with the salt and pepper since you will be seasoning the entire salad.
