French Toast



The past week I have been working on making a great french toast recipe sans eggs. I made it as traditional as possible. A lot of vegan recipes use bananas, but not everyone is a fan. This recipe is very simple but it's important to follow the directions closely otherwise you will end up with french toast mush. Not really appetizing.

PS. I made this recipe vegan only. I haven't experimented with gluten free bread for french toast just yet.

PSS. Don't like sugar? That's okay. Sub the sugar with agave or pure maple syrup. 

French Toast

2 slices of thick cut, stale bread
½ cup rice or soy milk
1 tbsp cornstarch (or arrowroot)
1 tsp vanilla
1 tsp sugar (sugar free: 1 tsp maple syrup or 1/2 tsp agave nectar)
Cinnamon (1/2 tsp)
Nutmeg (2 dashes)
Cloves (2 dashes)
1 tbsp Earth Balance

1. If your bread is not stale, preheat your oven to 300 degrees and put sliced bread in oven for 10 minutes. This will help crisp it up.
2. In a bowl whisk together the milk, cornstarch, vanilla, sugar, and spices.
3. Dip the bread into the milk mixture and let soak while you heat your pan.
4. Heat 1 tbsp Earth Balance in a pan over medium to low heat. Once heated add the soaked bread and cook until golden brown, about 5-7 minutes per side.

Keys: Use stale bread. Fresh bread will create mushy french toast. Let soak in mix for about 5 minutes so the stale bread can absorb everything. Cook on medium to low heat. If the heat is too high the outside will cook but the inside will be raw. So cook low and slow. Enjoy!
