Lunch?

Now that I am working longer days at work I have to think of food to bring to work. The usual lunch sandwich can get pretty boring. Tonight I decided to make a couscous and vegetable salad that I can bring with me. It's a cold salad so I don't have to worry about heating it up, even though I work in a kitchen. While the salad as I made it is only vegan, it could easily be made gluten free by using quinoa or even rice. I made enough for two servings so I can take it twice this week...thinking ahead!

With the couscous I added chopped red onion, red bell pepper, cucumber, halved grape tomatoes, parsley, and some watercress. Then I mixed some lemon juice, garlic, and extra virgin olive oil for a vinaigrette. It's light, fresh, and deeelicious! 


Besides making lunches every night I have so many things on my to do list. I desperately need to do a huge spring cleaning of my room (maybe even rearrange furniture?), hang shelves, build more garden boxes, start running more for training, more recipe testing, and order more flours/go to whole foods for more agave and coconut oil (I've been out for a while and haven't been able to bake! I'm going a little crazy.) I also found a recipe for a beet cake. It sounds weird but I'm intrigued. And that's not even half of my list : \

I finally got Martha Stewart's new pies and tarts cookbook. A huge variety of pies and a great source of inspiration. Night! - kb
