July 4th Pasta Salad

There is really nothing festive or american about this pasta salad expect for the fact that I made it on July 4th weekend.  : )

Gluten free pasta is so easy to find these days. Just about every grocery store carries it. Lets see...first I cooked some red onion. Then I mixed together the onion, sun dried tomatoes, artichokes, roasted red bell pepper, grilled zucchini and yellow squash, cooked pasta, parsley, and basil. I also made a vinaigrette from olive oil, balsamic vinegar, and salt and pepper. Very simple and delicious. This salad is actually better the next day since the vinaigrette soaks into the vegetables and pasta. Yum!
