White bean burger with a corn and arugula salad.
Near the bakery is a man named Lou. He runs a small farm stand. Lou likes dessert. I like vegetables. So, we have this arrangement. I make him cakes and desserts and in return he sends over corn, tomatoes, squash, peaches and so much more. It's beautiful.
The above corn and arugula salad is thanks to him. Fresh raw corn, tomatoes, cucumber, bell pepper, jalapeno, parsley, arugula, and red onion in a light vinaigrette.
The white bean burger is a recipe I found in the July issue of Better Homes and Gardens. Usually bean burgers are made with black beans, so this was a nice change.
I cannot believe how fast summer is going. My early summer tan (cough...freckles...cough) is fading, therefore a beach weekend is on the horizon.
