Zucchini Cakes


If I remember correctly, I found my inspiration for this recipe on pinterest. I've made zucchini cakes before but most were more like a pancake. This zucchini cake is more like a burger and with a touch of Old Bay it resembles a crab cake very much. I'm a firm believer that everything tastes better with Old Bay. Can you tell where I'm from?


At the meal pictured above I went with the crab cake theme and made a tartar style dressing. Some vegenaise, chopped pickles, a little lemon juice, and some coarse gain mustard. All on top of romaine, tomatoes, and cucumber. I'm sure you could bake (or broil) these cakes, but since I was eating them with a salad, I chose frying.


A side note, pinterest is awesome for finding recipes. There are so many out there. It's fantastic!


Zucchini Cakes (Vegan)

2 1/2 cup grated zucchini
2 tbsp ground flax seeds
6 tbsp warm water
1 1/4 cup bread crumbs
2 tsp onion powder
1 tsp old bay
1/4 cup all purpose flour
Salt and pepper


- In a small bowl whisk together the ground flax seeds and warm water about about a minute. Set aside while you assemble the remaining ingredients.
- Combine all the ingredients into a large bowl, including the flax and water mixture. Mix until thoroughly combined.
- Form into patties (any size) and fry in about 1/4 inch of oil until golden brown. Just a couple minutes per side.
- Place the fried cakes on a plate lined with paper towels to drain excess oil.
