Chickpea Salad Sandwich
This is very similar to any other salad sandwich you've seen before, expect it's made with chickpeas.
Another cool way to eat chickpeas is to roast (or fry) them with spices. I'll share some of those recipes another day.
Chickpea Salad Sandwich
- Makes enough for 3 sandwiches or salads
1 can chickpeas, drained and rinsed
1/4 of a red onion, chopped finely
1 celery stock chopped finely
1/4 cup vegenaise
1 tbsp coarse grain mustard
pinch of cayenne pepper
black pepper to taste
celery salt to taste
- In a large bowl mash the chickpeas with a potato masher. Only mash about half because you want to have some texture.
- Add in the red onion and celery.
- In a small bowl whisk together the vegenaise, mustard, and cayenne, black pepper, and celery salt. Pour over the chickpea mixture and mix thoroughly.
* I served this on toasted bread with lettuce and tomato, but it would make a terrific salad. Just omit the bread!
