Mustard Glazed Carrots
1 bunch of carrots
1 tbsp olive oil
2 tsp Dijon mustard
1 tsp apple cider vinegar
2 tbsp brown sugar
salt and pepper
- In a small bowl whisk together the olive oil, Dijon, vinegar, brown sugar, salt, and pepper.
- Toss with the carrots and roast in a 400 degree oven for about 25 minutes, or until tender.
*Since I used baby carrots they cooked fairly fast, but if you use larger carrots add more cooking time.
