I first came across these granola balls one day on Pinterest, then googled the recipe and found quite a few more. All similar, just minor changes.
They are super healthy, nutty, and perfect for snacking. When I made these, I kept them in my bag and munched on them all day. The only downside, I kept picking flaxseeds out of my teeth. Cute, right? Those issues aside, these balls are wonderful and you should make them asap.
Granola Balls
Makes about 12 golf ball size balls.
1 cup coconut, toasted
1 cup old fashioned oats (gluten free brand)
1/2 cup chocolate chips
1/2 cup ground flaxseeds
1/2 cup peanut butter
1/3 cup agave nectar
1 tsp vanilla extract
- To toast the coconut, preheat your oven to 350 degrees. Place a single layer of coconut flakes on a sheet pan and bake about 5 minutes. Keep a close eye on them. They go from golden brown to burnt in a flash!
- These granola balls are so easy to make. Mix all ingredients together and place mixture in the refrigerator for about an hour. After the mixture has cooled, form into balls, packing slightly. Store your granola balls in an air tight container under refrigeration for one week.
