I bought her book, My Father’s Daughter” a couple weeks ago and have mentioned it on here before. Not all the recipes are vegan and gluten free but lots are and I love how many recipes have a “Make It Vegan” option. I really like veggie burgers and I’m always looking for new recipes. Gwyneth’s book had one so I obviously had to try it. And….it was delicious. I only made two adjustments, one on purpose and one by accident. Let me explain. The burgers were mainly made from brown rice and black beans and I had half a red bell pepper in the fridge so I chopped it up and added it to the mix. I did that on purpose. So once I made the patties I placed them in the fridge to wait since they only cooked about 2 minutes per side. Once I was ready to cook them I just pulled them out and popped them into a hot pan. The recipe had you dusting the outside with flour before cooking, but I totally forgot. But, hey, they turned out! If you have a favorite gluten free bread you can use that but I just used a plain hamburger style bun. But if you have no buns eat this over some greens and a dollop of vegenaise mayo. It’s been my lunch the past 3 days! So good!
Homemade Veggie Burgers
Makes 4
2 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
¼ tsp cumin
Salt and pepper
1 (14 oz) can black beans, drained and rinsed
½ cup cooked brown rice
1 tbsp chopped cilantro (or parsley!)
2 tbsp flour (OPTIONAL)
3 tbsp oil for cooking (I used canola)
- Heat a large pan and add the olive oil. Cook the onion, garlic, and cumin until soft, about 7 minutes.
- Add the salt, pepper, beans, and rice. Cook for 2 minutes. Remove from the heat and add the cilantro or parsley.
- With a potato masher, mash the mixture to just combine. In other words mash about half of the beans. You want the mixture to form together, but not be a weird bean paste.
- Once the mixture is cool enough to handle, form into 4 patties and place in your fridge until you are ready to cook.
- Heat the 3 tbsp oil in a pan over medium heat. If you want you can dust the outside with 2 tbsp flour but I don’t think it is necessary. If you do, I would choose a gluten free all purpose flour blend or possibly just brown rice flour.
- Cook the burgers, about 2 minutes per side.
