Broccoli Orzo

Tonight I made the beets that came out of my garden and they were so good!! They had an incredible red/purple color on the inside. Much more intense then store bought beets. We made them with a mix of orange juice, brown sugar, and some other things i'm forgetting right now but I'll post it later. I also made a broccoli orzo pasta salad (with herbs from my garden!). Heres the recipe, it's vegan only. Don't mind my measuring techniques, it was a toss in as you go kinda meal.

Broccoli Orzo

1/4 onion, chopped
2 cloves garlic
zest and juice of 1 lemon
handful of parsley and basil
salt and pepper (lots!)
1/3 cup extra virgin olive oil
2 medium heads of broccoli
1/2 cup vegan mayo
1/4 cup slivered almonds, toasted
1/2 box orzo, cooked according to box

1. Steam all of the broccoli until tender but still bright green. Set aside.
2. In a food processor add the onion, garlic, lemon zest and juice, parsley, basil, and salt and pepper. Pulse until finely chopped. Slowly stream in the olive oil. Add in half of the broccoli. Pulse until almost smooth, about 10 times. Transfer to a bowl and stir in the vegan mayo.
3. Add in the remaining broccoli, cooked orzo, and toasted almonds. Season with salt and pepper. Squeeze additional lemon juice on top before serving.
