Lemon Poppy Seed Muffins

You know whats worse than failing at making carrot muffins? Dropping your water canteen and having it break and splash water all over you...as you walk into work. Yes, it has been one of those days. So, to lighten up the evening I decided to make some lemon poppy seed muffins. You know, instead of having a shot of tequila by myself.


I love lemon anything. Lemon bars, lemon curd, lemonade, lemon cake, lemon juice in my vinaigrette, candied lemon zest, and definitely lemon poppy seed muffins. My love for lemon could go on forever. My only beef with these muffins is the amount of seeds that get stuck in my teeth. Not very attractive.


I wanted to try something new so before I put the poppy seeds in the batter I scooped some in to the tins and added blueberries. Lemon blueberry muffins? I hope they taste as good as they look! These lemon poppy seed muffins are really pretty. A nice golden brown top and dots of poppy seeds.


At work our muffins tins are JUMBO and probably the equivalent of 3 regular sized muffins. I like to make mine on the small side so I can eat 2 for breakfast!
