Dinner!

Tonight I made a vegetable stir fry type thing. Basically I cooked a bunch of vegetables and rice, tossed it together, and it actually tasted pretty good! Here is a rough recipe of what I made. I used regular soy sauce so its vegan only. Of course there are gluten free soy sauces available that you could use.


Vegetable Stir Fry


2 cups water
1 cup rice
3 tbsp canola oil
1/2 red onion, chopped
1 red bell pepper, chopped
2-3 button mushrooms, sliced
1 zucchini, chopped
2 cups chopped broccoli 


- Heat water in a saucepan. Once at a boil add rice, cover, reduce heat, and simmer until tender, about 15-18 minutes. Set aside.
- Steam broccoli until tender, about 7-10 minutes. Set aside.


- In a large pan (or wok), heat the canola oil. Add the onion and red bell pepper. Cook until soft, about 5 minutes.
- Add in the mushrooms and zucchini. Cook another 5 minutes. Add in rice and broccoli and cook for another 3-5 minutes, stirring frequently.
- Pour in the chili lime soy sauce and stir to coat. Serve!




Chili Lime Soy Sauce


2 cloves garlic, minced
1 tsp dried chili flakes
1/4 tsp black pepper
1/4 cup lime juice
1/2 cup soy sauce


- Combine all ingredients together.
