Dinner and Doughnuts!

First things first, doughnuts. After work today I decided to test doughnuts again, this time a chocolate cake doughnut. I'm fairly pleased with the results! The batter was made from brown rice flour, bob's red mill all purpose gluten free flour, rice milk, applesauce, and some other secret ingredients ; )

I made a chocolate glaze from 10x, cocoa powder, and rice milk. Some of them got toasted coconut as well. These may seem like chocolate overload but the cake is actually light and not dense at all. The chocolate on chocolate had a good balance. Happy for success and plan to test more, non chocolate, doughnuts next week. Until then I need to plan what to make for Easter. Definitely going to try and make hot cross buns...a Easter staple. I also need to make something with carrots.



For dinner I made a pizza using the spelt dough I made a couple months ago (a post way back). I rolled out the crust and brushed it with olive oil. I partially baked it then topped with sauteed onion, garlic, red bell pepper, and mushrooms. On top of that I added thinly sliced radicchio and baked for about 5 minutes or until the radicchio has begun to wilt. Lastly I sprinkled on some chopped parsley. It was awesome!


Tomorrow I am massively cleaning my room. This has been looong over due. Enjoy the weather tomorrow, 80 degrees!! - kb

  1. um.. those doughnuts look amazing. I didn't know they made doughnut pans. That's pretty genius! Hope you're enjoying the weather... it's lows 40s here today. gross.

  2. thank you! low 40s sounds horrible!! Its definitely spring here now. i'm ready for my tomato plants to start popping. haha
