Once I made the batter I decided to test it in the form of a muffin. This way I can see how they will turn out, if the batter will sink, or if there are any changes I can make. Once the muffin turned out I decided to just make the entire batch into muffins instead of a loaf. The muffins turned out with a moist cakey center and a crisp top, my kind of muffin! Although these muffins had plenty of flavor and spice, I decided to jazz them up a bit more and drizzle over a maple glaze. It definitely put them on a whole new level of goodness. So...while I can't wait until it's warm out, I do love the flavors of fall and why not spend a lazy sunday afternoon reminiscing. I can only imagine these muffins would be better with some hot apple cider!
In other news, my seeds have begun to grow, especially lavender and arugula. Sooooo excited! I'll post later this week on how they are doing. - kb
