It's Wednesday! Today I went seed shopping and got a ton of seeds for my garden. Sowing seeds is my goal for tomorrow. Some of the seeds that I got include cucumber, eggplant, bell peppers, jalapenos, beets, summer squash, basil, cilantro, parsley, and chives. But two of the seeds i'm most excited about are lavender and chamomile. Do I hear homemade teas coming my way? Yes! I have more seeds I plan to get and of course tomato shopping. I'd really like to find heirloom tomatoes, but we'll see. Tomorrow I will post on sowing seeds for my garden but for now I thought I would share a great potato salad and a little treat I made this afternoon.
This potato salad is not like most potato salads you've had. In other words its not creamy. This potato has a French twist and the dressing is made with dijon mustard, vinegar, and oil mix. It's light and delicious. You'll never miss the mayo version, and hey, this one is even healthy.
French Style Potato Salad
4-6 servings
2 pounds of small red or fingerling potatoes
1/4 cup extra virgin olive oil
3 tbsp dijon mustard
2 tbsp white wine vinegar
1 shallot, chopped small
3 tbsp parsley, chopped
1/4 red onion, thinly sliced
salt and pepper
1. Cook the potatoes in boiling salted water until tender. Once cool enough to handle, cut into pieces.
2. In a bowl whisk together the olive oil, dijon mustard, vinegar, shallot, and parsley. Season with salt and pepper.
3. Toss in the potatoes and red onion.
4. Serve at room temperature. You can make this a couple hours ahead and store in the refrigerator.
