Valentine's Day


I hope everyone had a lovely Valentine’s Day. Mine was filled with making heart shaped cakes at work. Most years I don’t do anything special for Valentine’s Day, it is kind of a Hallmark holiday. This year I decided to send packages to friends in different cities. And what ships better than cookies? So this Sunday Lynn and I kept busy by baking four types of cookies, oatmeal raisin, double chocolate chip, peanut butter, and coconut macaroons. The oatmeal raisin ones also got a maple glaze on top. Yum! Not to many people seem to like coconut macaroons, maybe too much coconut? For me there is no such thing as too much coconut. So, sorry package receivers, there are no coconut macaroons for you, I wasn’t sure if you liked coconut and honestly, more for me! I also dipped some in chocolate…even better!

In my Oatmeal Raisin cookies I use flaxseeds as an egg replacer, in addition to applesauce. Heat up your liquid, water or rice substitute, pour over your ground flaxseeds, and whisk vigorously for one minute. The hot liquid really helps bring the two ingredients together and create that gummy foamy mixture.


Here is how I make my Oatmeal Raisin Cookies, step by step (in picture form).

Whisking all dry ingredients together.
Adding applesauce and flaxseed mixture to creamed sugar and earth balance.
Adding dry to wet.
Adding in raisins (craisins are great too) and oats (make sure gluten free certified).
