Caramelized Apples



     


     When I think of fall I think apples. I made these caramelized apples a while ago and folded them into a muffin batter to make apple and cinnamon muffins. While I am still working on the muffin recipe I though the apples were great. They'd be wonderful spooned over soy or coconut milk ice cream or perfect on their own. Use whatever apples you like best. I used a mixture of granny smith and fuji. The sweetness of these apples comes from agave nectar, making this recipe free of refined sugars.






Caramelized Apples
Makes about 1 cup


1 tbsp earth balance 
3 medium apples, peeled, cored, and chopped
2 tbsp fresh lemon juice
1 1/2 tsp cinnamon
1/4 cup agave nectar


- Melt the earth balance in a pan and then add remaining ingredients.
- Cook until the apples are caramelized and the sauce is reduced and bubbly.
- Store these apples under refrigeration for 1 week.
